Dear Betty Crocker
Q. What happens if I only use
egg whites or egg substitute in a
pecan pie?
S.W.
Tacoma, Wash.
A. When only egg whites, egg
substitute or even fewer whole
eggs are used in place of the
recipe’s amount of eggs in a pecan
recipe, the mixture will boil vigor
ously and over onto the oven floor.
This is caused by the lack of thick
ener supplied by egg yolks. For
best results use recipes formulated
for fewer eggs or egg substitutes.
Q. What is balsamic vinegar and
where can I find it?
E.P.
San Bernardino, Calif.
A. Balsamic vinegar is dark,
thick, slightly sweet vinegar aged
in barrels made of several woods.
Often its rich flavor is added to
fresh tomatoes or greens or in a
vinaigrette. Many grocery stores
carry the vinegar, as do specialty
foods stores.
Q. I’ve always used the area of
the pilot light on my gas range for
letting bread rise. My new gas
range is ignition lighted. How do
you suggest I let breads rise now?
Mrs. M.C.
Racine, Wis.
A. The hot water method will
work fine for you. Place bowl of
dough on a rack over a bowl of hot
water, covering it completely with
a towel. Thie gives you the ideal
temperature for dough to rise:
80*F to 85°P.
We don’t recommend setting
dough over a pilot light, because
the flame may be too hot for it,
causing the bottom layer of dough

to start baking.

partly ahead.

Food Lion’s Prices
8% Lower
Than Winn-Dixie’s
“New Low Prices”
Winn-Dixie’s been advertising a lot about how
they’re lowering prices. So we thought you might
like to know just how those so-called ’new low
prices' compared with Food Lion. A comparison
of 100 key groceries revealed Winn-Dixie
charged $103.84 for items that cost only $95.63
at Food Uon. FOOD LION'S PRICES WERE 8%
LQWER THAN WINN-DIXIES- Here are just a
few examples of how much more you pay for key
grocery items at Winn-Dixie. As you can see, if
Winn-Dixie claims their prices are as low as
Food Lion’s, they still have a way to go.
