OCRACOKE VISITOR IS SON OF SHIPWRECKED CAPTAIN Ocracoke, June 24.—Interesting visitors at Ocracoke at this time are Mr. and Mrs.‘Edwin B. Cole man of Springfield, Massachusetts, who are making their first visit with her sister, Mrs. Ralph Miles, and Mr. Miles of Milford, Connec ticut, who were also here with Mr. and Mrs. Walter C. O’Neal last summer. Mr. Cole man is the son of Capt. Cole man who was in command of the Heidritter, a four-master ship wrecked in a storm off Ocracoke in March 1942. After spending sever al days here making arrangements for the salvage of the vessel, which was carrying a load of dyewood, Capt. Coleman started back home to Springfield by land, and was kill in a taxicab accident in New ark, N. J. His son, Edwin B. Cole man was interested to find that the stores on Ocracoke are selling a service plate with a sketch of the four-master Heidritter on it, and he was interested too, in locating various shipwrecks on Ocracoke Beach. For many years Mr. Cole man, Jr. was associated with the Springfield Republican, but after this paper was discontinued he transferred to the Springfield Un ion newspaper. Wise cooks know ground beef can form the basis for a multitude of plain or fancy dishes. Deviled ’Burgers, as shown in the above picture, are well seasoned patties ideal for the main dish at summer suppers. Add some crisp green onions, a tossed salad, corn on the cob ana watermelon and you ve a meal to suit everyone. Be wise about buying ground beef. In your friendly supermarket you’ll always find ground ready-to-use beef the thriftiest buy. This is ?uality-controlled and made with just the right proportion of lean to fat. t is sold on a money back guarantee so you need have no doubts about quality. In all supermarkets you may have beef ground to your own order. The best cuts to buy are round steak, chuck, neck meat, or sirloin tip. If the beef is lean, have two ounces of suet ground with each pound. This adds flavor and juiciness. Ground beef should be made into patties as soon as you get it home. Place patties on waxed paper (or wrap the mound of beef in waxed paper). Keep in the refrigerator and use within two days. If you’d like more ground beef recipes, write to me: Nancy Carter, P. O. Box 4358, Atlanta, Ga. Here are some of the favorite ground beef patty recipes we have tested in our kitchen: STUFFED ’BURGERS: Shape seasoned ground beef into thin patties. In center of half the patty put a mound of mashed, seasoned roquefort cheese. Cover with another patty pinching edges together. Broil 5 min utes on each side. HE-MAN ’BURGERS: Shape patties one-inch thick. Broil about 7 minutes, turn and broil. When meat is almost done, top each patty with a generous spoonful of sour cream mixed with dehydrated onion soup mix. Continue broiling until browned. DEVIL ’BURGERS 1 pound ground beef Iteaspoons prepared mustard 1 teaspoon salt J 4 cup chili sauce J 4 teaspoon pepper 2 teaspoons horseradish 3 tablespoons chopped onion IVi teaspoons soy sauce Lightly mix all ingredients. Shape into 4 thick patties. Broil 8 to 12 minutes. Or, shape into 8 thin patties; pan fry and serve between buns. Makes 4 or 8 patties. HYDE CO. RED CROSS FUND DRIVE REPORT Mrs. B. W.
