Prize Barbecued Ribs Buy about 1 pound ribs for each serving. Have meat at room temperature. Lay ribs on grill well above hot coals. Cook very slowly, turn frequently. Long, slow cooking is required so allow 1 ’,4 to 2 hours. To test for done ness, bones should move easily and there should be no sign of pink meat next to bone. To smoke-barbecued ribs, wait until last 30 minutes of cooking to brush on barbecue sauce, or brush on the sauce just before ribs are served. This way, the ribs get full benefit of the hickory-smoke flavor. Speedy Grilled Ribs Cook ribs in pressure cooker then grill over hot coals for an outdoor finish. If desired, brush with your favorite sauce while grilling. Or, add a few drops of liquid smoke to the sauce for a smoky taste. Western Rib Sauce 1 cup catsup 1 cup water ’,4 cup vinegar 3 tablespoons Worcestershire 1 ’ teaspoon chili powder, optional Dash tabasco 1 teaspoon salt 1 teaspoon celery seed 1 tablespoon sugar Combine all ingredients.
