Lobster Salad j r | BY DOROTHY MADDOX I ROCK LOBSTER SALAD (Yield: 6 to 8 servings) I • 6 South African rock lobster tails Vt teaspoon salt I Vt cup lobster broth Dash pepper | Vt cup precooked rice Va teaspoon dry mustard 1 cup celery, diced Vi teaspoon aromatic bitters t | 4 tablespoons minced scallions 1 tablespoon lemon juice I Vz cup mayonnaise Vt teaspoon Worcestershire sauce | Drop frozen lobster tails into boiling salted water for 10 minutes. Drain • I immediately, reserving Vi cup broth for rice. Drench tails in cold water • • and cut away thin underside membrane.
