(Staff Photo) Smith Creek District Firemen Receive Certificates At End Of Training Eighteen firemen from the Smith Creek Fire District received certificates Thursday night following a 12-hour fire training course taught last week. The course was offered by the North Carolina Department of Insurance through the Fire and Rescue Service. Bill Allred of Asheboro was the instructor. The firemen completed unit one of the course which covered the introduction to fire fighting, use of protective clothing, the fog method of control, use of breathing equipment and other prac tices. The men were able to practice Wednesday night during a live drill. A vacant house was donated and burned for the firemen's use. The men were given the certificates on Thursday night at a barbecue supper attended by the mayor, town commissioners and the remainder of the men attending part of the course. Some 27 men attended several sessions, but only those completing the entire course were awarded certificates. Hector Aycock, Wayne Aycock, Archie Ayscue, Wallace Bowers, Sidney Burton, Irvin Hayes, Ernest Hecht, Clifton Hicks, Richard Holtzman, Stephen Daniel, Butch Meek, Gene Medlin, Wade Schuster, Hal Paschall, Dennis Paschall, Tom Peele, Roger Walker and Jimmy Brame were cited for their active participation in the course. C. State University Delicious fresh peaches should not be judged by their blush, for the red color isn't always a good indicator of ripeness. Instead, look at the background color, which should be creamy to a very mellow yellow, say NCSU agricultural extension specialists. Also, look for well-defined creases. Any green color on the peach indicates it might have been picked before it was fully mature and may be difficult to ripen as a result. Peaches should be fairly firm to the touch, but don't touch too forcefully. Peaches are delicate and bruise easily. Firm, ripe fruit can be softened to eating perfection if held at room temperature for a few days. FOOD POISONING Becaufte cream pies and cream-filled pastries get soggy if refrigerated too long, it's a temptation to leave them at room temperature. Don't. This encourages bacteria to grow and is why cream pies and cream puffs are foods often involved in food poisoning. Fill pastry as close to serving time as possible, recommends agricultural extension specialists at N. C. State.
