There is ordinarily a charge for this publication. HOUSEHOLD HINTS Use apples or apple peelings for making pectin to be used in jelly making. Extracted apple pectin : 4 pounds a])ples 2^ quarts water for the first ex traction Clean the apples thoroughly and cut them in slices. considerable amount of pectin O'f satisfactory quantity can be extracted from the cores and ])arings alone, but this extract does not have so pleasing a flavor as that obtained from whole apples. Add the water to the sliced ai)ples, boil the mixture rapidly in a covered pan for 20 minutes. Strain it through a jelly 'bag. Make a second extration of the pulp by adding to it an equal volume of water, boil the mixture for 20 minutes and strain it. The first two extractions should give about 3 quarts. Mix the extractions in a shallow pan and boil rapidly until the juice is concentrated to about XYi pints (abo,ut 30 minutes). Since too long 'boiling injures the pectin, the con centrating process should be done as rapidly as possible. If the pectin is stored for fu ture use, pour the mixture into sterilized jars and seal at once. In combining pectin with fruit juices low in pectin, use half as much pectin as fruit juice, and two-thirds as much sugar as juice and pectin cornbined. Plant Trees K. W. S. constitution by plant ing trees. He will help the associa tion distribute booklets containing a reprint of the constitution, all amendments, important dates, Wasli- ington’s letter of transmittal to Congress, and 16 pages of tree- planting instructions. One thing our city business men should remember; There is a vast difference between “good business” and right living. My idea is, there is nothing that pays quite so well as a rigorous adherence to proper care of the body. It is a shame that we violate every law of diet, sleep, and exercise—die young—and pht the blame on overvrork. Does Providence remove the man that commits suicide? 1 knew a man who worked in a stone-quarry on his farm until he was near eighty. “A freak,” you say. No, you are the freak! This man ate regularly; when tired, he rested. He had his full allotment of fres'h air; he slept eight hours every night; he ate just what he wanted and no more.
