FOR COMPLETE Electric Service and Supplies Phone 66 OR SEE J. P. WURST EGG COOKERY? A pinch of cornstarch and one of powder ed sugar added to the yolk of the egg before it Is beaten will keep an omelet from collapsing. To keep yolks of hard-cooked eggs bright, clear, and light around the edges, avoid over cooking. The secret of all egg cookery is low temperature. Egg yolks will keep for sever al days In your refrigerator If you cover them with cold water. Whites of eggs are more eas ily separated from yolks when the eggs are cold; egg whites beat up to more volume if they are at room temperatures when beaten. Juice from a jar of olives will give deviled eggs a delicious flavor. A stirred custard is done when it coats the spoon; long er cooking will not thicken it but will cause it to curdle. To divide an egg evenly when the recipe calls for only one-half egg, beat the whole egg, two tablespoons of the mixture is equivalent to one half egg. If a portion of egg yolk acci dentally falls into the white, a cloth moistened with cold water and touched to the yolk will re move it, or a piece of the shell touched to the yolk will remove it. * State College Answers Timely Farm Questions Q. Q Could you give me some special hints to good honey pro duction? A. Honey is a special food and you should give it special care. 1. Cut only new, fully seal ed combs. 2. Have jars thor oughly cleaned and dry. 3. Keep surroundings clean. A damp cloth can be used to clean up drops of honey and for wiping your hands. 4. Store honey in a dry place until sale. Q. Can I expect an increase in rate-of-gain In my pigs as a result of cross-breeding? 'A. Yes. Experiments have shown that an increase in rate of-gain can be expected. A purebred boar of one breed is crossed on a purebred, or a good grade bow of another breed. Many commercial hog breeders use a system called criss-crossing, where three breeds are used instead of two. Tellico Votes To Meet Twice Each Month By A. J.
