Heat oven to 325 ?F. Grease 1
quart casserole. Slowly stir grits in
to salted boiling water in heavy
saucepan. Return to boil; reduce
heat; cook for 2XA to 5 minutes,
stirring occasionally. Saute celery
and onion in 1 tablespoon
margarine about 3 minutes or until
tender. Combine grits, celery mix
ture and tuna; mix well. Stir in
eggs, milk and pepper. Place in
prepared casserole. Melt remaining
margarine; top casserole with
cracker crumbs and drizzle with
melted margarine. Bake for 25 to
30 minutes.
Banana Carrot Cake
1 Vi cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
Vi teaspoon soda
1 teaspoon cinnamon
Va teaspoon cloves
1 cup mashed ripe banana (3
medium)
Vj cup vegetable oil
2 eggs
1 cup quick or old fashioned oats
uncooked
1 cup shredded carrot (3 medium
carrots)
XA cup chopped nuts (optional)
1 cup sugar
Heat oven to 350 ?F. Grease
9-inch square baking pan. Com
bine flour, baking powder, salt,
soda and spices in small bowl.
Combine sugar, banana and oil;
add eggs, 1 at a time, beating well
after each addition. Stir in flour
mixture. Add oats and carrot; mix
well. Spread into prepared pan,
sprinkle with nuts. Bake about 40
minutes or until wooden pick in

Lemonade Pie

1 small can frozen lemonade
2 regular pie crusts or 1 deep dish
1 pkg. whipped topping
1 can condensed milk
Brown pie crusts, let cool. Mix
ingredients together and pour into
pie shells. Garnish with lemon
slices. Refrigerate. Makes 2 small
pies or 1 deep dish.
Cheese Buttons

2 sticks margarine
2 cups sifted flour
2 cups grated sharp cheese
2 cups rice krispies
Allow margarine and cheese to
soften at room temperature. Com
bine with other ingredients. Mix
thoroughly. Roll into small balls
(marble size). Place on ungreased
cookie sheet, and press with fork.
Bake at 325? about 18 minutes.
Makes about 100 buttons.
Three Bean Salad
(Lynn Maxwell)
1 large can french cut string beans
1 small can lima beans
1 cup mayonnaise
1 small onion chopped
1 large can garden peas
2 teaspoons mustard
1 teaspoon Worcestershire sauce
Drain vegetables. Combine all
ingredients. Cook 30 minutes for
325 degrees.
German Potato Salad
7 medium size potatoes
1 cucumber sliced fine
Vi cup vinegar
1 onion cut up fine
3 chicken bouillon cubes
V* cup hot water
Va cup oil
Boil potatoes until well done.
Peel while hot and slice thin.
Dissolve chicken bouillon cubes in
hot water. Mix all ingredients with
potatoes. Season to taste.
Hint: Set aside a half hour each
night to catch up on your cor
respondence. If you don't have the
time to write each friend a letter,
send a postcard with scenes of your
town or community. You won't
have to write as much and your
friends will know you are thinking
about them.
Dees Returns
From Sea Duty
Navy Machinist's Mate 2nd
Class Melvin L. Dees Jr., son of
Rachel W. and Melvin L. Dees of
Route 2, Raeford, recently return
ed from a six-month deployment
to Northern Europe.
He is a crewmember aboard the
destroyer USS Dewey, homeported
in Charleston, South Carolina.
While on deployment, the ship
served as flagship for NATO's
Standing Naval Force.
Stops in European ports includ
ed Scotland, the Netherlands,
West Germany, Iceland,
Greenland aid Denmark. Visits to
North Anfcricah ports included
Nova Scotia, Charleston, Boston
and Philadelphia.
The Dewey i> 313 feel long and
carries a crew of 377.
