Page 19-THE NEWS-May, 1985 Melchels By Norma Barach (Copyright 1985, JTA, Inc.) Noodles & Cabbage Two excellent recipes using cabbage can be found in the cookbook, “From a Kosher Pantry,” published by the Orthodox Womens’ League of Detroit. 1 tblsp. salt 1 tsp. sugar 4 cups cabbage (finely shredded} tsp. pepper V2 cup oil 3 cups broad noodles (cooked and drained} Mix the salt and cabbage and let stand 30 minutes. Squeeze out aU the liquid. Heat the oil in a deep skillet. Add the cab bage, sugar and pepper. Cook over low heat 45 minutes or un til cabbage is browned. Stir very frequently. Add the noodles and toss to blend thoroughly. Makes 6-8 servings. Sweet and Sour Cabbage 1 medium red cabbage boiling water 1 small apple (peeled, cored and shredded} 4 tblsps. flour salt (to taste} 3-4 tblsps. lemon juice pepper (to taste} 5 tblsps. brown sugar oil (to cover bottom of pot} Shred cabbage very fine. Secison with salt and pepper. Add cabbage and apple to oil in pot and brown. Pour boiling water to cover and simmer until tender. Add rest of ingredients. Sim mer 10 more minutes. Vinegar may be substituted for lemon juice. More sugar and lemon juice may be added to taste. Serves 6.
