The taste trio makes a choice luncheon or Sunday supper dish in Ham-Yam SouJfjes with this honey Os a sauce which you will want to use for other dishes as well as for the souffles. It would be deli cious spooned over a sal mon loaf or served with shrimp or crab during . this Lenten season. It can also be used to add sparkle to cooked carrots, squash or sliced cooked beets. These petite souffles are easily made with mashed yams blended with ground ham, evaporated milk, green pepper and onion and egg yolks. The egg whites are beaten stiff and * folded into the ham-yam mixture. V* cup finely chopped onion. 2 tablespoons finely chopped green pepper. 2 egg yolks, beaten. 2 egg whites, stiffly beaten. Combine ground ham, mashed yams, evaporated milk, green pepper and egg yolks. Fold in stiffly beaten egg whites and spoon into six greased five-ounce custard cups. Place on a baking sheet and bake at 250 degrees for 40 minutes. Invert and serve with Honey Lime Sauce. Honey-Lim* Sauce Vi cup fresh squeezed lime juice. I tablespoon cornstarch. % cup honey. 1 tablespoon butter. 1 teaspoon grated lime peel. Blend lime juice and cornstarch, add to honey and cook until thickened. Stir in butter and lime peel. Spoon over Ham- Yam Souffles. Makes about one cup. One of your pretty party pies would be perfect with a meal with the Ham-Yain Souffles as entree. For your chocolate-loving fam ily this Frozen Chocolate Torte is a do-ahead dessert which should win rave no tices. Isn’t it great to have all the good things that come in packages so we can make spectacular des serts with less a-do? Froaen Chocolate Torte 1 pkg. (12 oz.) frozen pound cake., 1 pkg. (12tfe oz.) fudge, buttercream frosting mix. 1 pkg. (3 oz.) cream cheese, at room tempera ture. V* cup lukewarm water. Toasted slivered almonds (optional). While frozen, slice pound cake horizontally into four thin layers. For frosting, combine frosting mix, sof tened cream cheese and lukewarm water in mixing bowL Beat at low speed with electric mixer or by hand until all ingredients are moistened. They brought home three of the eight awards given and will next participate in the Greater Tidewater Council event in Norfolk, Va„ on April 20. ■Fifteen vocalists from Troop 719 juniors won first place in their division with their reditions. Marion Dail won in stitching while the poster art award went to Ann Brown. Pamela Boyce of Brownie Troop 721 was recognized for her cross stitching. Twelve troops in the Elizabeth City area partici pated in Sunday’s festival held in the ballroom at the U. S. Coast Guard Base. Parents of Girl Scouts attending the Arts Festival in Elizabeth City on Sun day were: Mrs. Taylor Brown, Mrs. Nathan Dail, Mrs. Larry Noyes, Mr. and Mrs. Larry Williams, Mr. and Mrs. E. L. They are rich with an almost candy-like crispness and are intrigu ing to the eye. P*anut Lac* Roll-Up* Vi cup sifted flour. Vi cup sugar. Vi teaspoon salt. Vi teaspoon baking pow der. Vi cup melted butter or margarine. 2 tablespoons milk. 2 tablespoons dark corn syrup. Vi teaspoon vanilla. ■4 cup finely chopped, salted peanuts. Sift together dry ingredi ents. Add remaining in gredients and stir until well mixed. Drop by small teaspoonfuls onto greased and floured cooky sheets, at least three inches apart and no more than six cookies to a sheet. Bake one sheet at a time at 375 degrees six to eight min utes, or until bubbly in center and brown around edge. Remove from oven and cool about one minute on cooky sheet. Then work ing very quickly, remove one cooky at a time and roll top side out around a wooden spoon handle or similar implement Cool cn handle until set, then remove to wire rack, li cookies get too firm to rol: up easily, return cooky sheet to oven for about 30 seconds. Makes 2Vi dozen cookies. ENGAGEMENT The engagement of Miss Emily Arlene Bass to Hiller Fahey Byrum, Jr., is announced by her parents, Mr. and Mrs. W. Clarence Bass, Rt. 3, Edenton.
