Cookies that travel are these frosted Peanut Crunch and Pumpkin Nut Bars. The Herald Kitchen By MILDRED HUSKINS Cookies that travel be come more and more im portant this time of year. A box of Mamma’s cookies seems to help cure the home-sickness that is bound to develop about eight to 10 days after that son or daughter goes off to school. These recipes have only two steps in the prepara tion and each makes a big pan of bar cookies. They are rich moist cookies \hat stay fresh even though it takes them several days ..o get to their destination. Even the frosting is easy to mix and is as packable as the cookies. Don’t wor ry about the cookies going state after" they arrive. You know, “come over to my room, I got a box from home.” Peanut Crunch Ban Vz cup shortening. 1 cup packed brown sugar. 1 cup flour. Vz teaspoon soda. Vz teaspoon baking pow der. 2 eggs. 3 tablespoons water. 1 teaspoon vanilla. 1 cup com flakes. 1 cup Spanish peanuts. Ms cup oatmeal. BOTTLE 25c 31c THE CHOWAN HERALD. EDENTON. OCTOBER IS, 1969. Combine shortening, sug ar, flour, soda, baking powder, eggs, water and vanilla. Beat for two min utes. Fold in com flakes, peanuts and oatmeal. Spread evenly in greased 13 by nine by two inch pan. Bake at 350 degrees 20 to 25 minutes. Spread when cool with orange frosting. Pumpkin Nut Ban Vi cup shortening. 1 cup packed brown sug ar. V 4 teaspoon soda. Vi teaspoon baking pow der. 1 teaspoon cinnamon. V 4 teaspoon ginger. V* teaspoon nutmeg. 2/3 cup pumpkin (cooked or canned). 2 eggs. 1 teaspoon vanilla. Vi cup chopped nuts. Combine all ingredients except nuts in large mixer bowl. Beat for two min utes with electric mixer at medium speed. Fold in nuts. (Black walnuts are great for these). Spread in 13 by nine by two inch pan. Bake at 350 degrees 20 to 25 minutes. Spread when cool with orange frosting. Orange Frosting Blend until smooth two tablespoons shotening, one and one-half cups powder ed sugar, one tablespoon grated orange peel and two tablespoons fresh orange juice. Makes about one cupful. Mrs. Bessie Goble of Stony Point makes this wonderful White .Chocolate Cake which we’d like to try sometime soon if we could just find white chocolate in our market. It seems a friend sends Mrs. Goble the chocolate from Ohio and this cake is a favorite in her house. If you can find the chocolate, here is a good recipe to try. Clip it and keep it until the white chocolate is available. White Chocolate Cake V* lb. white chocolate pieces. Vz cup boiling water. 2 cups sugar. 1 cup butter (two sticks). 4 eggs. 2*4 cups cake flour. 1 teaspoon baking pow der. 1 cup buttermilk. 1 cup coconut flakes. 1 cup finely chopped nuts. 1 teaspoon vanilla. Melt chocolate in boiling water and let cool to room temperature. Cream butter and sugar. Beat in eggs one at a time until well blended. Add chocolate and vanilla. Sift flour with baking powder and add to first mixture alternately with the buttermilk in four or five additions. Mayor George Aima By rum has issued a proclama tion setting aside National Business Women’s Week. Initiated by the National Federation of Business and Professional Women’s Clubs in 1928, this week spot lights the achievements of career women and their contributions to the na tional economy and social structure. Throughout the nation, more than 3,800 BPW clubs and their 180,000 members represent the interests of all working women. The National Federation, which is celebrating its 50th an niversary this year, has a history of developing lead ership and supporting leg islation to insure equal op portunity and recognition for working women. The Edenton Club will mark this year’s National Business Women’s Week by having a “dutch” breakfast Monday at 7:30 P. M. at the Edenton Restaurant. Math Teachers Meet In Raleigh Five staff members of Edenton - Chowan Schools attended a meeting of the National Council of Teach ers of Mathematics in Ra leigh October 9-11. The program, featuring well-known speakers, was designed to appeal to teach ers of mathematics from the elementary to the junior college level. The local representatives included: Miss Mary Mac Holmes, D. F. Walker (primary); Mrs. Hattie Asbell, White Oak; Ralph Cole, Ernest A. Swain; Mrs. Marguerite Burch, .Chowan High School and Miss Gene Tomlinson, supervisor of elementary education. EASTERN STAR FISH FRY NEXT SATURDAY Edenton Chapter, Order of the Eastern Star, will Sponsor a fish fry Satur day, October 18, from 11 A. M. to 7 P. M. The fried fish will be served next to the Boy Scout Cabin and proceeds will go to the Masonic and Eastern Star Home at Greensboro. Tickets can be secured from any member of the Eastern Star.
