THE CHOWAN HERALD | The Herald I Kitchen J Continued From Page 8-B I 1 teaspoon cinnamon 1 egg I ‘4 cup firmly packed I brown sugar 1 tablespoon flour 1 teaspoon water I */4 teaspoon cinnamon J Heat oven to 350 degrees. I Generously grease and flour I Bx 4 or 9x5-inch loaf pan. In I large bowl, combine first 8 five ingredients; stir by 1 hand 50 to 75 strokes until I dry particles are moistened. I Pour into prepared pan. In I small bowl, combine I remaining ingredients; I sprinkle over top of batter. I Bake for 50 to 60 minutes or I until a pick inserted in 1 center comes out clean. Cool 1 upright in pan 15 minutes: 1 remove and cool on wire 1 rack. Serve warm or cool. I Store tightly covered in I refrigerator Makes 12 I servings. 1 Keep the school and other bag lunches tasty and I nutritious as well as the I snacks. How about a Fruit I and Cheese Sandwich? “Fruit and Cheese” Sandwich 1 pkg. cream cheese. I softened | 1 small banana, chopped Grated peel of ' L - fresh I orange I 1 teaspoon brown sugar 8 slices raisin or whole I wheat bread 2 fresh oranges, cut in I cartwheels I In bowl combine cream I cheese, banana, orange peel I and brown sugar Spread 4 I slices bread with cheese I mixture; top with orange I cartwheel slices and I remaining bread. Makes 4 I sandwiches. Orange 'n Apple Oatmeal Cookies 1 1 2 cups flour 1 teaspoon baking soda 1 teaspoon salt 4 teaspoon ground tin I namon 4 teaspoon ground nut- I meg :l/ 4 cup butter or I margarine, softened 14 cups sugar 1 egg Grated peel of one fresh I orange 1 fresh orange, peeled and I cut in bite-size pieces 1 apple, unpeeled, cored, I chopped 2 cups quick oats, un I cooked 4 cup chopped nuts Sift together flour, baking soda, salt, cinnamon and I nutmeg. In large bowl, cream together butter and sugar. Add egg and orange peel; beat well Gradually blend in dry ingredients. Stir in orange, apple, oats and nuts. Drop batter from teaspoon on lightly greased cookie sheets. Bake at 375 degrees about 15 minutes or until lightly browned.
