Everyone's Favorite Pizza Starter 1/2 cup King Arthur Un bleached All-Purpose Flour 1A cup lukewarm water pinch of instant yeast Dough 2 cups King Arthur Un bleached All-Purpose Flour 1 heaping tablespoon Pizza Dough Flavor (optional, but delicious) 84 cup water 2 tablespoons olive oil 112 teaspoons salt 1 teaspoon instant yeast Starter: Mix the biga ingre dients in a small bowl, cover, and let rest at room tempera ture overnight. Dough: In a large bowl, com bine the starter and the remain der of the dough ingredients, stirring until the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased surface, oil your hands, and knead it for 5 to 7 minutes, or until it's supple, but the surface is still some what rough. Transfer the dough to a lightly greased bowl or dough-rising bucket, cover the bowl or bucket, and allow the dough to rise for 2 hours, turning it over and gently de flating it after 1 hour. To make the pizza, preheat oven to 500°F. Roll the dough very thin, and place itonapiece of parchment paper cut to size. Top it lightly with your favor ite toppings. Don't go over board with the sauce or top pings-less is more! Using a peel, transfer the pizza (and parch ment) to baking sheet, and bake until crisp, 10 to 15 minutes. Yield: 1 thin 14-inch pizza. Cashie River Festival set for Aug. 18 WINDSOR—This year 's sec ond annual Cashie River Festi val, scheduled for Saturday, Aug. 18, from 10 a.m. until 3 p.m., features a variety of events located at different places in Windsor. There will be a free shuttle bus, which will provide transportation from one location to another. Martin Community College Bertie Campus on Granville Street will host the fine art show and sale with several area artists who will be competing for a $200 best of show, pur chase awards and other cash prizes. The craft show featur ing talented local crafters will also be held at the community college. There is no admission charge and the building is air conditioned. The big tents on Granville Street will feature food, face painting and other activities. The air-conditioned "Walker" building on King Street will house the Farm/ Home/Business Expo with dis plays by various organizations and businesses, giveaways, and sale items. There is no en try charge for the Expo. Some King Street businesses are planning a sidewalk sale with antiques and other sale items. The Roanoke/Cashie River Center on Water Street will host a variety of activities in cluding tours, a boat show, eductional boat rides, amuse ment rides for children, out door theatre, clowns and mu sic. The Bertie County YMCA will benefit from the food con cessions also to be located at the River Center. Joy Caron, the clown's alter ego, feels there are many clown personas dormant in the Edenton area. She plans to give them an avenue of escape to express themselves and bring joy to others with classes at "Edenton Clown College". Basic Clown Skills will emphasize types of clowns, wardrobe, make-up, protocol, and skits. Caron said, "We will touch on balloon sculpture, magic tricks, face painting, juggling and gags. We will also discuss when and how to perform in nursing homes, hospitals, churches, schools, parades, and parties." Agency tests com to protect public RALEIGH — Agriculture Commissioner Meg Scott Phipps has announced the lo cation of five field sites where the North Carolina Depart ment of Agriculture and Con sumer Services will collect samples of com for aflatoxin testing. Aflatoxin is a byproduct of the Aspergillus Flavus mold. The mold produces a toxin that can cause serious illness in both humans and livestock if ingested in quantity. Inad equate rain is the most com mon reason for the mold pro duction. "I encourage all growers to send in samples for testing," Phipps said. "The field collec tion sites enable farmers to conveniently get their samples to the NCDA&CS Food and Drug Protection Division." Testing is free to farmers and will be conducted in the Division's Constable Labora tory at 4000 Reedy Creek Road, Raleigh, NC 27607. Exhibit features R. Sams' artwork WASHINGTON, NC—Robin Sams of Tyner is the featured artist at the NC Estuarium for the month of August. Her paint ings depicting scenes of life around the estuary, are filled with light and color. The large oil painting on display in the lobby is especially outstand ing, showing a Canada goose family swimming peacefully into the sunlight. Mrs. Sams is the owner of Robin Sams Gallery in Edenton. She holds an art de gree from the Rhode Island School of Design, and has been painting in oil, watercolor and acrylic for a number of years. She has won numerous awards in North Carolina, most re cently in the NC Watercolor Society Show in Manteo in2000. She has received two Emerg ing Artist Grants from the NC State Arts Council, and will have a show at the Pasquotank Arts Council in October. Mrs. Sams enjoys concen trating on the effect of light on form and color, and works re alistically in watercolor and oil. Her favorite subjects are portraits, figurative work and landscapes, which are repre sented in this show.
