Label Offers Key To Consumers' Questions Consumers are worried about food additives, according to recent research. "Additives preserve the quality, nutritional value, flavor and appearance of foods that are shipped and stored," says Rachel Kinlaw, extension food specialist at North Carolina State University. She breaks the types of additives down into basic categories: - Antioxidants prevent food spoilage or the undesirable change in color or flavor caused by oxygen. They also help keep oils and fats from turning rancid. BHA, BHT, propyl gal late are some of the com mon antioxidants. - Emulsifiers help keep oil and water from separating. They are used in foods such as salad dress ings. Emulsifiers also prevent the ngredients foods with fat, like chocolate, from separating. They also improve the texture in baked goods. Lecithin, which comes from soybeans, acts as an emulsifier in foods like chocolate and margarine. - Nutrients may be added to improve the nutritional quality or to increase the amounts of nutrients which are normally dif ficult to get in the diet. Iron and cal- 1 cium are two examples. - Leavening agents cause baking products to rise. - Stabilizers and thickener? ' give foods a smooth texture, thick- \ en beverages, jams, jellies, ics j cream and prevent water from freezing into large crystals. Ex amples include starches, car rageenan, locust bean gum, aga. sodium alginate, gelatin and pec tin. NEW VA REHABILI TATION CENTER: The Department of Veterans Affairs is establishing a new rehabilitation center in Cleveland to conduct research to help victims of spinal cord injury and other disabling conditions to acquire some limited use of their limbs. The VA Center of Excellence in Functional Electrical Sti mulation (FES) is a colla borative effort with researchers and health care professionals from the Cleveland VA Medical Cen ter, Case Western Reserve University, and Metro Health Medical Center. FES is electrical activa tion of nerves to stimulate movement of paralyzed muscles. Ifs one of the therapies used to treat many of the 10,000 or so people disabled by spinal cord ii\jury every year, or who lose the ability to walk or use their hands due to stroke, head injury and other physical problems. They will be responsible for handling a regular caseload, assisting in develop ment and implementation of outreach community education, working with private attorneys through bar association spon sored, "Private Attorney In volvement" panels and develop ing expertise in specific substan tive law areas. QUALIFICATIONS: General ly, applicants must be licensed to practice in North Carolina or eligible for admission by comit) Applicants must be able to relat to individuals of diverse educa tional, socioeconomic and cultural backgrounds, and evidently sensitivity to the needs and concerns of low income peo ple. SALARY: The salary will start at $20,000 depending on ex perience. PSLS provides a com prehensive fringe benefits pro gram, including health and Life insurance, disability coverage, paid vacation, and other sick leave, pension and anunity.
