Glazed Hens A Touch Of Color
You know cold weather is
really on its way when you
begin to see bright, fresh
cranberries in the market.
In this delightfully festive
recipe, cranberry sauce,
brown sugar, onion, cinna
mon and low-sodium
Kikkoman Lite Spy Sauce
combine in a warm garnet
colored glaze for succulent
Rock Cornish hens. The
rich, flavor enhancing qua
lities of all-purpose, na
turally brewed soy sauce
are well known. The only
difference in low sodium
soy sauce is that 40 per
cent of the salt is extract
ed after brewing - a real
plus for those concerned
about the amount of
sodium in their diet This
delicious glaze is brushed
on the inside and out, so the
tender, little hens have a
delicate and mouth
watering flavor. This one
recipe you’ll want to serve

CRANBERRY GLAZED
HENS
4 fresh or frozen Rock
Cornish hens (thawed,
if frozen)
1 can (8-oz.) jellied cran
berry sauce
1 Tbsp. brown sugar,
packed
3 Tbsp. Kikkoman Lite
Soy Sauce
1 tsp. onion powder
% tsp. ground cinnamon
Remove and discard gib
lets and necks from hens.
Rinse under cold running
water; drain well and pat
dry. Combine cranberry
sauce, brown sugar, lite
soy sauce, onion powder,
cinnamon and 3 table
spoons water in small
saucepan. Heat over me
dium heat until cranberry
sauce dissolves and mix
ture is smooth (do not boil).
Cornish hens are glazed with cranberry mixture.
Remove from heat and cool
slightly. Place hens, breast
side up, on rack in shallow
pan. Thoroughly brush
cavities arid skin of hens
with glaze. Bake in 375
degree F. oven 70 minutes,
brushing hens with glaze
every 35 minutes. Cover
hens loosely with alumi
num foil; return to oven
and bake 30 minutes
longer, or until hens are
tender. Let stand 5 minutes
before serving. Makes 4
servings.
