Mincemeat Rolls For Tea Or Dessert « Mincemeat pie brings appealing visions to many people, but why stop with mincemeat in pie? Use this spicy-sweet mixture in yule tide dainties, suggests Reba Staggs, home economist. Joined j with rich biscuit dough, it's the j perfect treat for tea or dessert j time. For clever rolls, mincemeat is i spread on biscuit dough, rolled up! in jelly roll fashion, cut into pin- j wheels and baked. For tea-size Tolls, the dough should be rolled thin, for dessert-size, a thicker dough should be used. And for even more more appeal, dessert rolls are topped with a hard sauce. Mincemeat also takes its place j in adding flavor to cookies and pies—including apple, pear, cran berry and pineapple One-half cup of mincemeat is spread over the fruit filling just before it is cover ed with pastry. Thinned with un-, sweetened pineapple juice, mince-1 meat is a delicious topping for ice j -cream or a tangy stuffing for bak-j ed apples. WHERE? Mfar ah ^/Inri s | | CooKing Class « ! ■ Fruit Nuggets 1 cup shortening 2 cups sugar 2 eggs 3 cups flour 3 teaspoons baking powder 1-4 teaspoon salt 1-2 teaspoon cloves 2 teaspoons cinnamon 1-2 teaspoon nutmeg 3-4 cup milk 1-2 cup candied pineapple chopped 1 cup raisins 1 cup candies cherries 1 cup walnuts Cream shortening, add sugar cream well. Beat eggs and add Sift together the flour, baking powder, salt cloves, cinnamon, nut meg and add alternately with tht milk. Add pineapple, raisins, cher ries and walnuts. Mix well. Drop by spoonfuls on a greased baking tin or in tiny baking cups. Bake in an oven 325 degrees. White Fruit Cake 4 eggs 1 cup butter 2 cups sugar 3 cups flour 1 cup black walnuts 1 cup almonds chopped 1 pound pineapple cut fine 1 pound citron cut fine 1-2 pound candied cherries 1 teaspoon vanilla extract 1 teaspoon lemon extract Mix and bake in loaf pan as other fruit cakes. Poor Man's Cake 1-2 cup butter or margarine 1 cup sugar 1 cup watermelon rind preserves 2 teaspoon baking powder 2 eggs 1-2 teaspoon salt 1-2 teaspoon cloves 1-2 teaspoon cinnamon 1 cup nu s chopped 1-2 cup raisins 2 cups flour 1 tablespoon cocoa 1-2 teaspoon mace Mix as other cakes. Bake in an oven 375 degrees for 1 hour. Since the early Indians of North Carolina did not know how to treat smallpox or how to prevent its spread, whole tribes were wiped out by the dread disease.
