It is strawberry time and Miss Virginia Wilson, Exten sion Specialist in Foods and Nutrition, gives the following information in her latest pub lication "Strawberry Delight": "God could have made a bet tor berry, but douotless God never did," Dr. Wm. Butler said of the strawberry in the | seventeenth century. Many peo ple today agree wholehearted-1 ly with him. Strawberries serv ed with cream or as short cake | are hard to beat. There are, however, many delightful ways| to serve this luscious fruit. Eat strawberries as a fruit | course or on cereal for break fast. Serve them as an appetiz er, or in salads or desserts I ?'or lunch Or dinner. The flav-' or and bright color of the fresrh berry has been captured in the freezing process to make them a year-round favorite. Fresh or frozen, strawberries are a delicious way to get your quota of Vitamin C. One scant cup of whole fresh or % cup sliced, frozen strawberries will give you the amount of Vita min C needed daily. Most peo ple think that oranges and oth. er citrus fruits are the only source of this vitamin. Straw berries, cabbage, cantaloupe, tomatoes and many other North Carolina produced foods are good sources of this hea'Jh protecting vitamin. Vitamin C cannot be stored in the body. A fresh supply is needed daily to: aid in healing wounds, to keep gums healthy, strengthen walls of blood ves sels and help to fight colds and other forms of infections in the body. Strawberries lose quickly much of their vitamin C if capped and left exposed to air. If they are to be held a few days, keep the whole berries unwashed and spread out in a container in the refrigerator. This prevents mold. To save food value wash and cap ber ries just before using and thaw frozen berries in the package. It fresh strawberries must be prepared a few hours ahead, keep them in a tightly covered container in refrigera tor. Strawberry Parfait ? 1 pkg. strawberry gelatin dessert V4 cup sugar Vz cup boiling water 1 cup crushed strawberries 1 cup whipping cream or 1 cup evaporated milk Mix the sugar with strawber ry gelatin, which already has some sugar in it Add boiling water and stir until dissolve, i Chill until it begins to sot.' Whip the cream until it forms1 a soft peak. (If evaporated milk is used, chill it in tho freezing I unit until the crystals form;, then whip). Fold into the chill-1 ed gelatin mixture the whipped cream and crushed strawber ries. Fill parfait glasses or des sert dishes % full with mix ture. Chill until it sets. Strawberry Cake Pudding 3 tablespoons butter or mar garine V4 cup flour V? cup sugar t teaspoon baking powder V? teaspoon salt 1 cup milk 1 pkg. thawed, sweetened strawberries or 3 cups fresh strawberries and lVfe cup sugar Melt buter in quart cas serole. Sift together the flour, >.4 cup sugar, baking powder and salt. Add milk and blend thoroughly into casserole with butter Do not stir. Add the thawed, fozen strawberries. Do not stir. If fresh berries I art- used, mix with sugar and heat until sugar is melted. Cook in a 400 deg. F. oven un til cake pudding rises to top and sets and sauce forms on the bottom?or about 30 min utes. The menu consisted of barbe cued chicken, slaw, potato salad, congealed salad, pickles, deviled eggs, cake, pies and soft drinks. Around 25 attended the din ner and evening of fellowship. On the North Carolina dairy farm, a cow must produce at least 7,500 pounds of milk and nearly 300 pounds of butter fat per year?in order for the dairyman to break even on her.
