C State College, Raleigh June being Dairy Monti much emphasis is being plac ed on using milk and mill products in the diet. Mill being our most nearly perfect food, we should make a spec ial effort to include the amount recommended by nu tritionists in the diet eacl day. Adults need 2 cups and children need 4 cups daily. The following recipe is one you may wish to use in in eluding more dairy foods in your menu: PINEAPPLE CHEESE MOLI Perfect For Buffets Pineapple tidbits combinc wonderfully with cottage cheese and cream cheese tc make this molded salad a de light to the palate as well as the eye. Add salted nuts for crisp texture interest and whipped cream for fluffy richness. Colorful canned pineapple slices, spiced crab apple and grapefruit sections are its crowning glory. Allow plenty of time for chilling so salad will hold 'ts shape well. Since it's r'enty rich with crenm and cream cheese, dressing is not nec essary. PINEAPPLE CHEESE BUFFET MOLD 1 (8-ounce) package cream cheese 2 caps small curd cottage cheese 1 envelope unflavored gelatin 1/4 cup cold water I (1-pound 4'4-ounce) can pineapple tidbits 3/4 cup snipped chives (optional) 1 cop whipping cream Salad greens Pineapple slices Spiced crabapples Grapefruit sections Soften crcam cheese an blend until smooth. Combin with cottage cheese. Softe gelatin in cold water in snial measuring cup. Set cup i hot water until gelatin melt: ; Stir into cheese Add we drained pineapple, salted nut and chives. Whip cream an fold into mixture. Turn int 6-cup mold.
