By VERNA STANTON Assistant State Agent An important rule for keep ing home-canned food as well as jellies and jams in best con dition is to put them away in a cool, dry place ? and prompt ly. If these foods are allowed to stand around in the hot moist air of the kitchen, they lose quality and may not keep well. In heat colors fade, and flavor and texture deteriorate. Also paraffin seals on jelly glasses may loosen. In damp ness tin cans and metal tops of glass jars may corrode and GRATEFUL RELIEF! Drug Store eventually cause leakage. The specialists add that coal, dry storage Is needed also for best keeping of commercially canned goods. These products often de teriorate if left on upper shelves j in the kitchen where they suf fer from both heat" and hum ; idity, or if they stand in sunny I grocery store windows. The cook who saves time by ! putting sweet potatoes in the : oven or kettle without peeling also saves vitamins. Tests made at experiment stations show What sweet potatoes, boiled or baked in their skins, hold their I naturally rich content of caro ! tene (for Vitamin A) and vita min C very well. Tests of a number of varieties of sweet po tatoes show that, when baked or boiled without peeling, these I vegetables retain from 69 to | 83 per cent of their vitamin C. i Potatoes cooked in -a. pressure saucepan held the most C. Those peeled and then boiled lost the most. Many people add a little sugar to the boiling water to give the potatoes a sweeter flavor. The tests show ed that this helps save C? a tip for the future when sugar is more plentiful. State College Answers Timely Farm Questions Q. What can I do to control diseases and weeds in tobacco plant beds? A. Cyanamid will control weeds but not tobacco diseases in the soil. Uramon will aid in j killing weeds and will also kill such soil borne diseases as black rot, black shank, root knot, and Granville wilt. Use 1 pound of Uramon and one-half pound of Cyanamid per square yard of plant bed. Where there have been toxic ef fects, change the rate to one half pound of Uramon and one half pound of Cyanamid per square yard. After the soil has been well disced, pulverized, and smoothed so as to break up small clods, mark the bed into small plots. This will make it easier to get the same quantity of chemicals on all parts of the bed. After 100 pounds of Uramon and 50 pounds of Cyanamid have been mixed, spread 100 pounds, or two-thirds of the mixture, over the 100 square yards of bed evenly by hand. Work' chemicals in the first 3 or 4 inches of the soil with a light drag harrow or hand rake, but n6 deeper. A peanut weeder may be used or a disc harrow, with the disc set at a very slight angle, depending upon firmness of the soil. Broadcast MARKETING ?!>'? BY ALL MEANS When finances are low, give thanks for franks and A&P's thrifty ANN PAGE BEANS ... and put ttrnm together like this: To two 16 cz. cans of beans, add 2 or 8 sliced frankfurters, 1 tbsp. brown sugar, H tap. grated onion and 14 cup tomato juice or ketchup. Pour into baking dish or bean pot and bake in a moderate oven, 850?F., 26-80 \ minutes. 6 satisfying servings. STRETCH IT OUT WITH KRAUTI You won't hear a single beef about ground beef prepared this way: To M lb., add % tap. salt; shape into balls and cook in 2 tbsps. fat until browned, turning occasional ly. Add 1 cup boiling water, 2 onions (cut m halves), ] cup cooked or canned tomatoes and 1 #2 can of A&P SAUERKRAUT. Simmer about hour. Serves 4. LEFT-OVER "PUSH-OVER" Two cups of left-over meat will serve 4 to 6 people . . . right ... if it's stretched so: Mix together 1 finely chopped onion, % tsp. salt. 1 tsp. horseradish, 1 tsp. mustard and vb Up. pep per. Add to 2 cups : mashed potatoes. Combine 1 egg | (beaten), % cup WHITE HOUSE EVAPORATED MILK from the ASF (undiluted), 1 tbsp. melted margarine and 2 cups left-over or ready-cooked meat (chopped).
