By CECILY BROWNSTONE Associated Press Food Editor LIGHT AND AHtY sponge - cake roll with a tang? filling made <rom a can of lemonade concentrate That's a dessert to serve to com pany. Follow our directions cafe fully and you'll not have trouble in preparing it. LEMONADE ROLL Ingredients: 3/4 cup sifted cake flour, 3/4 teaspoon double-acting baking powder, 1/4 teaspoon salt, 4 eggs, 3/4 cup sugar, 1 teaspoon vanilla, confectioners' sugar. Lem onade Filling, whipped cream or softened cream cheese. Method: Grease bottom of Jelly roll pan f 15 by 10 by 1 inches) with salad (not olive) oil. Line bottom of pan with waxed paper; grease paper with oil. Sift together the flour, baking powder and salt. Beat eggs in deep bowl (about 11/2 quarts) with rotary (electric or fast-action hand) beater until foamy; beat In sugar gradually and rapidly until as thick as heavy cream and a pale yellow color. Beat in vanilla. Sjft a little of the flour mixture at a time over the beaten eggs, folding it in lightly but well. Turn into prepared pan spreading so batter is equally deep. Bake in moderate (375*) oven just until top springs back when touched lightly with dinger and cake tester inserted in center comes out clean?13 to 15 minutes. Do not overbake or paper will be hard to remove. Loosen edges of cake from sides of pan with sharp knife; turn cake over on tea towel that has been spread with confec tioners' sugar, easing one corner from pan with spatula. Remove waxed paper at once. Starting with short side, roll cake gently, with towel in it. Allow to stand rolled in towel to cool. Unroll and spread with Lemonade Filling. Roll up cake again without towel; lift tow el high with one hand as you roll and guide cake itself with other hand. Place edge side down on serving plate. Serve with ? sweet ened whipped cream or with cream cheese softened with a little milk or cream. The filling is a tangy one and it needs the bland topping suggested. Makes 8 servings. LEMONADE FILLING Ingredients: 1 can (6 ounces) frozen lemonade concentrate, wat er, 2 tablespoons cornstarch, 2 tablespoons flour, 1/2 cup sugar, 2 egg yolks (slightly beaten) 2 table spoons butter or margarine. Method; Add enough water to lemonade concentrate to make 1 1/2 fups. Mix cornstarch, flour and sugnr thoroughly jn heavy 1 1/2 or &-quart saucepan. Stir in lemonade-water mixture gradually; m, -I. beat with a small whi.sk or fork until smooth after each addition. Cook and stir constantly over direct moderate heat until mixture come to a boil; boil l minute. Re move from heat. Beat a lttle of the hot mixture into slightly beaten egg yolks; beat back into remaining hot mixture.
