This week they are advertised in the Newspaper ads on special. For a really successful cookout-you'll need high quality, young, tender-meated birds. When shopping for poultry-be sure to look for the U.S. Department of Agriculture's grade shield on the label. It means that the chicken has been graded for quality by federal and state graders. Chickens labeled U.S. Grade A are the highest quality ones. They're fully fleshed and meaty and have a good overall appearance - making them the best choice for outdoor broiling. This grade shield will be found on packages of chicken parts as well as on whole chickens. While the grade shield indicates quality - the real key to tenderness is the age or class of the bird. Young chickens are more tender than older ones. They may be labeled young chicken. Rock Cornish game hen. broiler, fryer, roaster of capon. On the other hand, mature, less tender chickens will be labeled stewing fowl, hen. mature or old. Try the following recipe. CHICKEN BAR B-QUE 2'/j lb. chicken ?54 stick butter or margarine 2 lemons (juice) ?54 cup vinegar 1 tbsp. salt I tsp. garlic salt 1V4 tsp. paprika 54 tsp. dry mustard -54 tsp. Texas Pete Sauce Prepare sauce prior to putting chicken on grill. Baste chicken frequently, usually each time it is turned. To test for doncness take the drumstick and (wist lightly and if it turns in the joint you can consider it done.
