Although injected prior to slaughter, the enzyme is not activated until the meat is cooked; that is, the heat from cooking tends to start the tenderizing aption. All of thp meat of the aipiqal is af fected since the enzyme is spread throughout the beef animal’s cir culatory system rapidly, being re tained in even the smallest blood vessels. Tests on bopf from livestock ten derized hy the new method have shown that less expensive cuts can be sliced and grilled satisfactorily as steaks. Although the tenderize? has been found to be effective on all grades of beef, initial use will be made primarily on the high quality cuts. This tenderizing process is still in the test stage, but it is expected to have commercial significance in the near future. The process can also be applied to other animals. Successful results have already been achieved on veal and mutton; however, greatest concern has been given to beef rather than oth er meat animals. No wonder farmers are getting rich! Much of today’s misunder standing between rural and urban interests stems from wrong con cepts concerning the farmer’s share of the consumer’s dollar. The following incident is a good exam ple: At a supermarket in a central Illinois town, the lady shopper was told by the checkout gir(, “The amount is $12.91.” The shopper then exclaimed, “No wonder the farmers are getting rich.!’ This is what she had in her basket: 6 bottles of cola, 3 pairs of nylons, 1 long-playing record, 50 Jb. soft ener salt, 1 box of cornflakes, a fifth of gin, 1 egg beater, 1 quart of milk. Actually her groceries came to 52 cents—29 cents fqr the corn flakes and 23 cents for the milk. The producer got about 10c for the quart of milk and perhaps 3 cents for the corn that went into the flakes. Only 13 cents out of her $12.91 bill could be charged to the farmer, yet she said, “No wonder farmers are getting rich.” Did you know—that the human body as a whole is 70 per cent wa ter? It is the other 30 per cent that makes the difference between a puddle and a person. That vital 30 per cent comes from the food we eat. Heat on Judge Goochland, Va. (AP)—The heat | was on Judge C.
