OYSTER CREAM RICE CASSEROLE
Oysters combine with cooked rice in a delicate lemon
cream sauce to make a casserole topped with Parmesan
cheese and buttered crumbs. A dish designed for those who
really love oysters seasoned just right! Complete tiie menu
with buttered green beans, citrus fruit salad, bran muffins
and applesauce cake.
Oyster Cream Rice Casserole
1 pint (2 cops) oysters
14 cup milk (about)
3 tablespoons butter or
margarine
1 teaspoon salt
1 tablespoon flour
14 teaspoon paprika _ -
1 tablespoon grated onion
1 tablespoon lemon juice
2 cups cooked rice
14 cup buttered cereal crumbs
14 cup grated Parmesan cheese
Drain oysters, reserving liquid.
Add enough at the milk to make
one cup liquid.
Melt batter in saucepan; stir in
flour, salt, and paprika. Add milk
and oyster liquid ail at once, stir
ring constantly until smooth. Cook ,
until thickened, stirring occa
sionally.
Fold in onions, lemon juice, rice,
and drained oysters. Pour into a
greased 1-quart casserole.
Combine buttered crumbs and
cheese. Sprinkle over casserole.
Bake in moderate oven (876 de
grees) about 20 minutes, or until
thoroughly heated and crumbs are
browned. Yields six servings.

flours and cereals, be sure “en
riched” or “restored” or “whole
grain” is imprinted on the labels.

breads made with milk for addi
tional food value.
