Shrimp salad is a popular cue and you will be wise to keep * can ortwc chilling in the refrigerate* ^ ' SHRIMP SALAD, CHAUD-FRQID 2 cans (4M ounces eech) shrimp, chilled 1 cup diced celery 1 cup diced .cucumber 1/2 cup finely chopped onion i 1/3 cup drained capers 2 hard-cooked eggs, chopped fine 1 envelope unflavored gelatin 1/4 cup water 1 cup mayonnaise. 1/4 teaspoon hot pepper sauce ✓ 3/4 cup broken cashew nuts Rinse shrimp in cool water; blot dry. Combine shrimp, vege tables, capers, and eggs. Soften gelatin in water; dissolve over hot water; stir into mayonnaise, a little at a time. Add hot pepper sauce and combine with shrimp salad mixture. Mix thoroughly. Add the cashews. (Be sure the nuts are very dry and crisp.) Pram into individual molds or one 5-cup mold. Chill until set. Makes 6 serving!.. BY M. E. GARDNER, N. C. State University These tips on growing Afri can violets are contributed by Mrs. S. E. Collins Sr., of Mar ion: “Wifi Rogers’ favorite saying was: “Well; all I know is what I read in the papers.” Well, all I know about African violets is from trying and failing, and try ing again. And, as practice mak es perfect in all thngs, so goes in growing African violets. “I found their likes and dis likes. They do not like direct sunlight in the heat of the day. They never like it too hot or too cool. Set them back a ways and in front of a south or south •east window with a Venetian blind open. They don’t like it too wet in rainy weather; if they are left standing in water the leaves on the underside will drop off. Before watering, let ithe soil begin to feel dry on top. In hot and dry weather give plenty of water. One of my lessons I learned was, don’t try to grow them in planters wth no drainage. Plant them in clay pots so they can breathe and set the pots in a platter. Water by pouring the water in the planter. It is also good to use a wick, taping it to the in side of the pot andl running it •out through the hole in the bot tom and let them draw their wa ter up through the wick. Al ways water from the bottom. one pint of vermioalite. Mis thoroughly and water, but not too wet. Now, pinch off leaves with about one and one-half inches of stem. Insert in mixture cov ering about one-fourth inch oj the leaf base as this is where they put up new plants. Place rooting pan in a sunny window and keep moist at all times.
