PARHAM Home Service Representative of Carolina Power & Light Company |!.j| MS; VEGETABLES DELUXE Stuffed Egg Plant 1 good sized egg plant 1 can mushrooms Yz cup chopped onion 1 cup cooked minced ham Salt and pepper Cut slice from top of egg plant and scoop out center to withtn a half inch of outer skin. Chop mushrooms and egg plant meat, and saute in butter. Add onion, minced ham, and salt and pepper. Fill egg plant shell, sprinkle top with buttered bread crumbs. Bake at 350 degrees F. for 30 to 45 min utes. Garnish with pimiento strips. Vegetable Souffle 2 cups cooked vegetables (chopped corn, carrots, beans, etc.) 1 cup thick white sauce 3 egg yolks 4 tbsp. butter Salt and pepper % tsp. nutmeg 3 egg whites Buttered crumbs * Combine cooked vegetables with 1 cup of thick white sauce. Add egg yolks, butter, salt and pepper, and nutmeg. Beat until stiff, three egg whites, and fold into veget able mixture. Turn into buttered casserole and sprinkle with but tered crumbs. Bake at 375 degrees F. from 45 minutes to one hour. Serve immediately. Red Cabbage 4 to G strips bacon 1 medium sized red cabbage 1 sour apple, chopped 1 onion, chopped fine % cup sugar Salt and pepper V* cup vinegar Cut bacon into small pieces and fry until crisp. Shred cabbage and add to bacon in pan. Add onion and apple and cook 15 minutes. Add salt, pepper, sugar, and vine gar. Cook about 15 minutes longer on very low hgat. Green Beans Creole 1 tbsp. butter 1 tsp. prepared mustard 1 tsp. Worcestershire Sauce Yl tsp. salt 4 cups cooked green beans, (fresh or frozen) Few grains cayenne pepper Cream butter and add other in gredients. Serve on hot green beans.
