Blood Pressure Clinic ?-12 and 2-5 p.m. Cook' s corner EDNA WOLVERTON CHICKEN BREASTS ON SPINACH 4 boneless chicken breasts-1-: lb. ea. pepper and salt to taste 10 oi. fresh spinach 4 T. butter 2 c. ( lb. ) fresh mushrooms, sliced 3 T. chopped onion t. nutmeg 4-6 T. Parmesan cheese Sauce Supreme Salt and pepper chicken. Brown on both sides in butter (2 T. i and remove from pan. Add remaining butter, mushrooms and onions to the pan. Add spinach and nutmeg. Cook until spinach is wilted. Tear 4 squares of foil large enough for chicken. Place spinach, cheese and chicken in that order on each piece of foil. Close securely. Bake in an oven proof dish at 475 degrees for 20 minutes. Remove from foil and serve sauce over each SAUCE SUPREME 2 T. butter 2 T. flour IH c. chicken broth Juice >2 lemon pepper and salt to taste *ac. cream Melt butter in a sauce pan Add flour.
