Owned and operated by Thurman and Faye Harrell, the local strawberry patch it located In Bear Swamp and is well into its 1983 season. The season doesn't last long, ac cording to Mrs. Harrell, beginning usually around mid-May and climaxing during Memorial Day weekend. "We hope they (strawberries) last tj through next week? Perquimans Extension Home Iconomist Juanita Bailey suggests reezing the bright berries, so they an be enjoyed all year. Both the lavor and bright color, as well as the itamins, can be preserved when rozen. However, strawberries lose much { the vitamin C if capped and left xposed to air, according to Bailey. If hey fre to be held for a few days, hey should be stored, uncapped and inwashed in the refrigerator. Anyway you take them, these are scrumptious berries. They are ilmost universally enjoyed? and erve as one of the many attractions n Perquimans County. Faye Harrell's Recipies Strawberry Nut Cake 1 yellow cake mix 1 strawberry jello 1 cup Wesson oil 1 cup berries Vi cup milk 4 eggs 1 cup coconut 1 cup nuts Mix and bake at 350. You can use fresh or frozen strawberries with recipe. Just crush and sweeten the berries. Icing 1 box powdered sugar 1 stick margarine Vi cup berries Mi cup nuts Mix and spread on cake. Sprinkle top with cup coconut. Strawberry Glaze Pie Sak? and cool a pie crust (regular or graham cracker). Wash and cap one quart of fresh strawberries. Cut up one cup of the berries and mix one cup sugar and three tablespoons of corn starch in a two quart saucepan. Stir in one cup of water gradually until smooth. Add the cut up berries and cook over medium heat until thick and clear. Stir in a few drops of red food coloring. Cool. Stir in remaining berries, saving K cup for garnish. Pour into pie crust and chill until firm, (about 3 hours.) Garnish with cool whip and remaining berries. Pie Crust (makes 2) This is a good crust for the above pie or any fruit pie 1 stick margarine 1 cup flour (self-rising) V* cup brown sugar 1 cup nuts Mix together and press into pie pan with fingers. Cook at 350 for 15 minutes or until light brown. Cool before adding pie.
