Smith, of Rt. 2 Shelby, formerly of Kings Mountain, wants to share with readers of this column her recipe for “78 Kellogg's Kiispy Kandy." nils recipe freezes well and makes about ten five to six Inch logs and Is Idesd tor serving with party pickups. Tn a bowl, prepare cuid mix together: 4 cups Rice KrUpy's 1 cup chopped pecans 16 orsmge slices (csmdy) chopped Dash of salt Beat two egg whites In electric mixer until stiff. Add sugsu- mixture. Beat until gloss disappears. Swirl In one cup extra crunchy peanut butter. Add first mixture of pecans, orange candy slices and Rice Krispy. Shape Into logs about five to six Inches long. Roll In flake coconut. Place on waxpaper and top with pecans to make them look good. Ctolll. Turn heat on low after mixture comes to a boll. Simmer until soft ball 'torms In a cup of cold water. Add slowly to egg mixture. Place Kandy In freezer several hrs. Slice thin for party pick-ups. Cold Weather Calls For Soup (From Page 4B) 2 lbs. ground chuck 2 cups chopped onion 6 stalks celery chopped 1 green pepper chopped 2 cans tomatoes 2 can kidney beans 1 tablespoon sugar 2 tablespoon; chill powder or 3 2 tablespoons vinegar Ssdt to taste Saute onions, celery and pepper. Brown meat. Add other Ingredients and simmer very slowly for one hour. -oOo- RICE CASSEROLE 1 stick margarine 1 med. onion, sliced 1 cup rice, uncooked 2 cans beef consomme (no water) 1 can sliced mushrooms, drained Saute onion In margarine. Pour over rice. Add consomme and mushrooms. Bake In un covered casserole dish at 860 degrees for 1 hr. (Especially good served with roast beef). -oOo- HOT FRUIT CASSEROLE 1 No. 2 can peaches 1 No. 2 can pineapple chunks 1 No. 2 can pear halves 1 14 oz. Jar apple rings 2 T cornstarch ^ cup brown sugar hi cup sherry hi stick butter or margarine Drain fruit, save juice from peaches, pineapple and apple rings to make 2 cups. Add cornstarch, sugar, sherry and butter to juice and cook until thickened. Arrange fruit attractively in a long casserole. Pour thickened sauce over all and bake at 360 degrees for 20 min. Serve with any beef or poultry. Serves 6-8. , -oOo- EASYOVEN BEEF STEW A grand family, quick and easy 3 to 4 lb. lean cubed chunk 1 envelope Upton’s beef mushroom soup mix 1 small can tomato paste 4 bouillon cubes or a can of bouillon water to cover Ctomblne all Ingredients In covered roaster. Do not brown meat. Cook at 360 degrees for 2 hr. until meat Is tender. Great with noodles or easy frozen stew vegetables can be added In the last 46 min. of cooking.
