Evapor ated milk gives them a tender crumb and super texture. Try them. 'They’re fun. ENGLISH MINI-MUFFINS (Makes about 2‘A dozen) y« cup butter % cup undiluted CARNATION Evaporated Milk ‘A cup water 1 package active dry yeast 2 tablespoons sugar 1 teaspoon salt 1 egg 3*4 to 3‘A cups flour Cornmeal Melt butter in .small saucepan; add evaporated milk and water. Heat to 115°F. Dissolve yeast in evaporated milk mix ture. Place yeast mixture, sugar, salt, egg, and 2'A cups flour in larg^ mixer bowl. Beat with dough hooks at medium speed 5 minutes. Stir in remaining flour, ‘A cup at a time, until dough cleans sides of bowl. (Add as much flour as possible.) Knead with dough hook 6 minutes. Form dough into ball; place in buttered bowl. Cover and let rise in warm place 1 hour. Punch dough down; let rest 10 minutes. Sprinkle bread board with cornmeal; roll dough *A-inch thick. Cut into 2¥4-inch rounds; place on commeal-covered surface. Sprinkle muffins with additional cornmeal; cover with towel and let rise hours. Heat heavy skillet or grill to 300° F. Cook muffins 6-10 minutes per side or until lightly browned. Muffins may be frozen if desired. Now more than evei; right for you!
