Holiday Recipes Cont’d from p. 16 Buckwheat Latkes (pareve) 2 pkgs. dry or V2 oz. fresh yeast 1V2 tsps. salt V2 cup lukewarm water 2 tbsps. sugsur 2 cups cold water V2 cup melted pareve margarine 1 cup flour 1 tsp. baking soda (dissolved in V2 2 cups buckwheat flour cup cold water) Oil Dissolve yeast in warm water; add cold water. Sift together flour, buckwheat and salt. Stir in yeast mixture. Beat well un til smooth. Cover and refrigerate overnight. In morning, stir in sugar, margarine and dissolved baking soda. Let stand at room temperature for V2 hour. Drop by spoonsful onto hot greased griddle or thick pan. As soon as pancakes are bubbly and puffed, turn and brown on other side. Makes about 32 pancakes. Latke Making Tips * All latke recipes can be made lighter — if that’s the way you prefer them — by sep£u-ating the eggs emd adding the yolks along with the other ingredients. Whip the whites until stiff and fold into the batter before frying. * Calories in all these recipes can be reduced by frjdng in non stick peuis or in pans that have been sprayed with a nonstick product. * Cholesterol and saturated fat content of the recipes can be reduced by replacing eggs with egg substitutes or with two egg whites for each whole egg. * Excess greasiness can be eliminated by having fat at the right temperature for frying (375° or hot enough so that a drop of water sputters when dropped into it) and by draining finish ed latkes on paper toweling.
