Even in this enlightened period there are a great many people who do not realize in the least what the W. C. T. U. really is. They imagine that it is an organization of cranks and fanatics, whose purpose is to promote woman's suffrage, and wage bitter war against the lipuor traffic. The last named in one of the chief objects of the organization, but many people do not know, or entirely lose sight of the many other good things that the W. C. T. U. has done. While there may be in this, as in every other great movement that was ever statred, a few cranks and "new women," the Wo man's Christian Temperance Union is a liberal minded and far-reaching organization and anyone interested in mission work, either home or for eign, cannot find wider scope for their energies than to engage in this noble work. They do a large amount of foreign mission work in addition to teh home mission work they are cons tantly doing. From time to time trey have sent out round-the-world mission aries, who have used their best ef forts to counteract the effects of the Amercian whiskey, which is sent out in such large quantities to tne heatr-en that we are trying to convert. Since the beginning of the movement they have had seven missionaries who have hade a tour of the world and many others who have done efficient work 1n foreign fields. At present Mrs. J. K. Barney is laboring among the sol diers and natives in Cuba, with good results. Another work which the White Rib boners are carrying forward very suc cessfully is the flower mission and jail work. What they have accomplished along these lines alone is enough to convince any thinking person that they are on the right road. They are working along so many lines that it would take too much space to tell them all, but it can be briefly summed up by saying that their aim is to do everything in their power to make homes happy and the world "better. A travelling man, who has been on the road for more than twenty years was recently talking of the changed conditions among business men. Hi said that in times past a travelling salesman could take two or three days off and get drunk and have a good time, generally, when he happened to catchr a town where he could enjoy himeslf. and his house would overlook the matter, provided he was a gcod salesman and could get orders. A great many of the merchants were of the same tiype as the travelling men and when they wrote for a certain drummer to come around that meant several days of carousal and "fun," -as they called it. But now all that is changed. Com petition is strong and the man who succeeds must work and not spend his time in debauching. The sales man who sells the most goods nowa days is the keen man, who is ever on the alert and can give a merchant the best goods for the lowest money, and not the one who can drink the most whiskey and give the merchant the most fun. Neither merchant nor salesman can afford to waste so much time and money when the world is moving for ward so rapidly. There is usually a superabundance of sour milk at this season of the year, and it is well to be provided with a varety of receipts in which it may be used. The following receipts have all been tried and have proved satis factory, and the result has been a de cided addition to the table with very little expense. BREAD CAKES Take one pint of bread and soak it in sour milk until soft. Rub through a colander, add a little more sour milk. To one quart of this, add two eggs well beaten, a little salt, three-quarters of a teaspoonful of saleratus. and flour enough to make a batter a little thicker than for the ordinary pancakes. Bake on a hot griddle. GRAHAM GEMS. une pint or sour miiK, witn one even teaspoonful of salteratus. stirred into it, one teasspconful of brown su gar, one tablcspoonful of melted but ter a,nd about one quart of graham liour cr enough to make a thick bat tpr. CORN GEMS. One egg, two cups of sour milk, one an da half cups of Indnian meal, one and a half cups of flour, two teaspoon ful of soda and a little salt. Bake in hot gem pans or in a loaf In the i-.t-ier case omit one teaspoonful of the Lhortening. SPIDER CAKE. Mix toeetber one-third of a cup of flour and one and two-thirds o fa cup of Indian meal. Add two eggs one cup of sour milk, one small teaspoonful of saleratus, one cup if sweet milk, quarter of a cup of sugar and a little salt. When mied have ready a hot spider with butter half the size of an tgg melted. Then pour in the above and add another cup of sour milk with out stirring. Bake 25 minutes. Notice. All parties who keep drays for hire are hereby notified to call on the City Tax Collector and get their license and number. Under the City's New Charter all license taxes must be paid on or before June 30th, 1901. And if not paid by that time the tax collector is instructed to apply to the Mayor for warrant charging said parties with doing business without a license. The fine is fixed at $20. R. M. REES.
