When using bleaah es, always test for the effect on an unexposed seam. On nonwashable articles", send to drycleaner while stain is fresh. B From The Yancey Extension Homemakers food news & cues „ By Mrs. Mary Gillespie We are indebted to Mae Da vis for this Casserole. It is all vegetable and very good. Those of us who have eaten with Mary know she is an excellent cook and a very original one-- she isn't afraid to try all kinds of blending of flavors and really comes up with excellent results. She also seems to have a knack at "weedling" favorite recipes from others. This recipe, she says came from a very old col* ored lady who had cooked for many years at a favorite, farm house type restaurant in Georgia. SOUTHERN VEGETABLE CASSEROLE 2 cans English peas (or same amount frozen) 2 cups chopped celery—put in baking dish--slice over this one stick margarine. Pour over 2 cans of chicken soup. Sprinkle with bread crumls and then sprinkle over lightly with grated nutmeg. Bake in 350 degree oven for an hour. Sprinkle topwell with evaporated milk and brown. We are still thinking of ways to use eggs during the month of September. We might con sider the versatile omelet. It makes a good breakfast, lunch or Sunday night supper. It can also serve as a dessert. The U. S. Dept, of Agricul - ture says eggs are plentiful, now is the time for serving omelets. Plain omelets are prepared ex actly like scrambled eggs, but are not scrambled ditring cook ing. All ingredients are com bined in a bowl, mixed until light yellow in color and then poured into a frying pan contain ing melted butter. Cooking al ways is over low heat. Plain omelets are also referred to as flat or French omelets. These omelets are tenderly compact i n texture, moist and have* a delicately browned bottom side. They may be served "as is", topped with cheese or filled. Fluffy omelets require two bowls for the mixing stage. The egg whites are beaten until stiff but not dry in the first bowl. The yolks and a seasoning are whip ped to a light yellow in the second bowl and then folded in to the egg whites. The mixture is poured into a frying pan or baking dish containing melted butter and cooked or baked un» ' til lightly browned and the top surface "springs back" when lightly touched. Fluffy one lets —often called "puffy" omelets --are frequently served as a dessert. Some of the liquids which may be used in the omelet pre paration include whole milk, cream, half and half,, evapora ted milk, nonfat dr/ milk, wa ter, mushroom liquid, tomato juice, and other fruit juices. Interesting flavor notes are imparted to omelets by the ad dition of liquids and spices, herbs and finely chopped vege tables. The addition oi any condiment, spice or vegetable Top-of-the-Line’73 Monte Carlo - ' r li.'\ vv ;fY ' ' ' 6 The all-new Monte Carlo, the flagship of the Chevrolet fleet, is among the most changed of aikseven Chevrolet car lines in 1973. Featuring beautifdlly sculptured side and rear-quarter metal, new grille, and an optional Landau or opera-type vinyl roof, the Monte Carlo is a styling classic. Many months of advanced chassis and suspension engineering work have given the Monte Carlo handling and roadability said to equal or surpass that of Europe’s most expensive personal touring cars. Introduction date for all 1973 Chevrolets will be Thursday, September 21. Receive Masters Degrees should be kept to the "subtle" stage, so the full flavor of the egg mixture is accented but not over-shadowed. Chopped fish, seafood, poul try, meat, vegetables and fruit frequently are combined into sauces for serving atop the omelets. Entree garnishes may include chopped pare ley, pirn - iento, green pepper or mush rooms. Dessert garnishes in clude chopped dried fruit, marasehino cherries, jellies, .jams, preserves, grated lemon, lime or orange rind and pr .v --dered sugar. A dessert omelet is a varia tion of the fluffy omelet onto a .warmed serving plate, spread it with jelly, preserves or jam and fold ft in half. Sprinkle the omelet with pdwdered su gar and serve it immediately. Dessert omelets may>be served cut into wedges or slices. % . VA Questions And Answers Q.
