Copeland Perfect cookies can be easy The word cookie means small cake. All cookies are similar to cake, but the most obvious cake-like cookies are brownies and other sheet cook ies. Although all recipes are good, I want to show you how you can make them even bet ter. Crispness is achieved by low moisture content. Baking them longer and making them small and thin helps evaporate the moisture. High amounts of sugar and fat also help to make them crisp. Some people like soft cook ies, which is the opposite of making a crisp cookie. If you have little amounts of sugar or fat and if you don’t bake them as long you will have cookies that are soft. Also honey, molasses and corn syrup help make cookies soft. A chewy cookie is soft, but not all soft cookies are going to be chewy. (kneading a lot) can be added to the list for soft cookies to make them chewy. Spread is just as easy to con trol. Spread happens when the cookie dough is cooked. It kind of 1/2 melts, therefore the cookies spread. If you increase the temperature, they will not have time to spread as far. You can also change the dough to control spread. The more you add and the coarser the sugar is, the more the spread. High amounts of baking soda or baking ammonia increases spread. If you increase the creaming (increasing the air) you’ll increase the spread. Send your baking questions to: The Perquimans Weekly, c/o John Grosjean, P.O.
