Remember To Vae Gibleiii Don't leave out some of the best parts of the Thanksgiving turkey. The gibtelS'gizzard, heart, liver and neck-cooked until tender and diced, make a delicious addition to either the gravy or the dressing, say specialists with the North Carolina Agricultural Extcn.Mon Service. They should be cooked immediately after being cleaned and washed. The broth they are cooked in can be used as liquid in either gravy or stufting. To cook, cover the giblets, except for liver, with water, seasoning with 1 teaspoon salt. 3 peppercorn.s, 3 cloves, a small bay leaf and a little onion, celery and carrot. Simmer 2 to 3 hours until the gizzard is fork tender. Add the liver 10 to 20 minutes (dep<'iiding upon size) before giblets are done Kefrigenitc until used Vet's Corner EDITOlt NOTE.
